The Wood

Siamese rosewood, also known as Thai rosewood, is renowned for its rich reddish-brown coloring and interlocking grain patterns. Prized in Southeast Asian woodworking traditions, it offers excellent durability and a natural oil content that helps resist moisture. The warm tones deepen beautifully with age and use, developing a rich patina that makes each handle more beautiful over time.

Purpose-built for deba and other single-bevel Japanese knives, this handle features a slightly wider profile to accommodate the heavier blade geometry. Crafted from premium Siamese rosewood with its rich reddish-brown tones and interlocking grain, finished with a buffalo horn ferrule. Traditional octagonal shape for confident grip.

Deba knives are fishmongers’ tools, meant to be levered against fish-bone to separate meat from backbone — the grip has to take torque that a regular slicer never sees. The slightly thicker cross-section of this handle absorbs those forces comfortably, and Siamese rosewood’s interlocking grain resists splitting along the force lines better than straight-grained woods.
