For a double-bevel Japanese knife, stay within the sensible range for its type—commonly the low-to-mid teens per side—and let its factory bevel be the starting guide. The exact number matters far less than holding the chosen angle consistently. A steady 15° beats a wandering “perfect” 12°. Angles still matter: too acute can leave an edge fragile, while too obtuse can make it feel less keen. But the useful goal is a stable angle that reaches the edge, not winning a degree-counting contest. Here are the ranges that matter, and why chasing degrees is the wrong obsession.
Why does consistency beat the number?
A knife edge is simply two planes meeting at a very narrow line. Sharpening removes metal from those planes until they meet cleanly again.
If the blade rises and falls with every stroke, the stone touches a slightly different part of the bevel each time. Instead of creating two clean planes, that wobble gradually rounds the area near the edge. The knife may look polished and feel smoother, yet the two sides still do not meet in a crisp apex.
That is why the burr matters more than a claimed degree. A burr is the tiny lip of metal pushed to the opposite side when the stone has reached the very edge. It can be subtle, but its presence shows that sharpening has reached the apex rather than merely polishing somewhere behind it.
The burr is evidence. A number copied from a video is only an intention.

Which angle ranges actually matter?
For familiar double-bevel Japanese shapes—gyuto, santoku, bunka and nakiri—the useful territory is commonly the low-to-mid teens per side. Commonly published sharpening guidance places Japanese-style knives around 10° to 15° per side, with Western-style knives typically sharpened at a steeper angle. Those figures are category-level guidance, not instructions to overwrite the geometry already on a particular knife.
A thin knife used for controlled slicing may work toward the more acute end of that territory. A sturdier knife, or one regularly meeting dense produce and less delicate technique, may benefit from working nearer the upper end. More acute generally means less resistance through food but less metal supporting the apex. Steeper generally means more support, with some loss of that exceptionally keen feeling.
Western knives are useful only as contrast: they are typically sharpened steeper because their geometry and intended use are often more robust. That does not make one approach better. It shows that the appropriate range follows the knife and the work.
The factory bevel on the knife itself is the best guide already available. Unless there is a clear reason to change its geometry, match and maintain it. Do not reprofile a sound factory bevel merely to reach an internet number.
Does the number mean per side or inclusive?
This page speaks in degrees per side: the angle between one face of the edge and the stone.
An inclusive angle describes the complete wedge formed by both sides. On a symmetrical edge, 15° per side equals 30° inclusive. Conversely, 30° inclusive means 15° on each side. That arithmetic is an example, not a target.
A surprising amount of sharpening advice silently mixes these conventions. A bare statement such as “sharpen at 20 degrees” is incomplete unless it says whether that means each side or both sides together.
When the source does not say, look for a diagram or wording such as “blade-to-stone angle,” which usually indicates per side. If the convention remains unclear, do not use that number as a reason to alter the knife. Also remember that some double-bevel Japanese knives are intentionally asymmetric, so “per side” does not guarantee that both sides were formed identically.
Why are single-bevel knives different?
Yanagiba, deba and usuba belong to a different sharpening discipline. Their maker-established geometry combines a broad primary bevel with a specially formed back face. The owner’s task is to preserve that existing relationship, not select an appealing angle from a chart.
The double-bevel ranges on this page should not be transferred to them. Flattening, lifting or modifying the wrong surface can change how the knife steers, releases food and supports its edge. For a first attempt, follow the maker’s published instructions or learn directly from someone qualified to teach that knife type. This is the boundary where general double-bevel advice stops.
How can an angle be held without gadgets?
Start by matching the existing bevel rather than trying to manufacture a degree by eye. Place the knife gently on the stone and adjust it until the edge bevel appears to sit evenly against the surface. Notice how that position feels in the wrist and fingers, then keep the movement small and controlled.
The marker method is a useful visual check commonly taught by sharpening instructors:
1. Colour the existing edge bevel with a permanent marker. 2. Make a few light strokes on the stone. 3. Inspect where the ink was removed.
Ink removed evenly across the bevel suggests that the factory geometry is being followed. Ink remaining at the cutting edge means the stone has not reached the apex. Ink removed only at the very edge suggests that the blade is being held steeper than the broader bevel.
This test is more informative than trying to estimate a degree from spine height. Reapply the marker whenever uncertainty returns. Use light pressure while checking; the aim is to read the contact, not remove unnecessary metal.
Clip-on guides and other angle aids exist. They can provide a repeatable reference, but the actual angle still changes with blade width, guide position and stone thickness. They also cannot control pressure or prevent every wobble. They are optional training aids, not proof that the edge has reached the chosen geometry.
When is the angle actually the problem?

Return to the marker, use controlled strokes, and confirm that the stone reaches the whole edge before changing the geometry.
Angles matter at the level of sensible ranges. Within that range, repeatability and evidence matter more than another degree of theoretical precision. The range is real; the third decimal place is theatre.
