Why does one cypress run through the Japanese kitchen? Hinoki (Chamaecyparis obtusa) links Ise Jingu, the Shinto shrine complex at Ise, with the protected forests of Kiso, a mountain region in central Japan. Ise Jingu says its palace is rebuilt every twenty years. The Japanese encyclopaedia describes straight grain, easy working, resistance to warping and rot, long-retained strength and distinctive scent. Those qualities suited shrines, baths, tubs and boards. A board is the everyday end of that timber culture: its softness lets wood, not the edge, take the marks. Its antibacterial reputation mostly follows a compound concentrated in another tree.
A palace remade beside itself
Shikinen Sengu is the scheduled rebuilding and renewal at Ise Jingu. According to Ise Jingu, a new palace of the same dimensions is constructed every twenty years on the adjacent site. It is not a quick exchange: Ise Jingu says the preparations and rituals take about eight years, and it identifies the rebuilding completed in 2013 as the sixty-second.
The official Ise-Shima tourism site dates the current cycle to 2025–2034. At Kiso, timber for the container that will hold the relics is cut first. Renewal continues after the former buildings come down. The tourism account says old structures and torii—the gateways at shrine entrances—are moved to other shrines, “with no timber going to waste.” The same source describes Shikinen Sengu as a tradition continuing for more than 1,300 years.
The Ise-Shima tourism account uses the phrase “sacred cypress” in this shrine context. The reverence is concrete: an exact form remade, craft knowledge carried forward and responsibility accepted for timber needed in the future. It does not turn every hinoki object into a ritual object.
A forest planned beyond a lifetime
Ise Jingu’s forest page records a forest-management plan begun in 1923, with a 200-year target for growing its own cypress for future renewals. The same page identifies Kiso as the designated source forest. Together, the two forests show that rebuilding depends on long preparation rather than an assumption of endless supply.
At the 2013 rebuilding, Ise Jingu says part of the timber—thinnings from the shrine forest—came from there for the first time in about 700 years. This was not the completion of the long plan. It was an early material result from management intended to outlast the people who began it.
A forest working on that horizon asks each generation to leave useful growth for another. The shrine is renewed within a human lifetime; the timber programme stretches well beyond one. Hinoki’s cultural importance rests partly in that mismatch of timescales.
Kiso, five trees and a severe rule
The Forestry Agency names the Kiso Goboku, or Five Trees of Kiso: hinoki, sawara, asunaro, kōyamaki and nezuko. Hinoki may be the most familiar name abroad, but the group matters. Kiso’s timber culture protected several valued conifers rather than treating the region as a forest of one symbolic species.
The head-for-a-tree rule conveys how severe that protection became. The Forestry Agency states: “The threat of capital punishment meant that Kiso’s trees began to be protected.” The wording is stark. It points to pressure and scarcity, not picturesque abundance or forest folklore.
The Forestry Agency calls Kiso timber “renowned for centuries” and describes groves of 300-year-old cypress. It also identifies Akasawa in Kiso as Japan’s first Recreation Forest, designated in 1969, and as the birthplace of shinrin-yoku, usually translated as “forest bathing.” The later invitation to spend time among the trees sits beside an older history of restricting their removal. Both make sense when Kiso is understood as a finite timber landscape.
What bath, tub and board share
The Japanese encyclopaedia includes bathtubs among hinoki’s uses. Shrine buildings, bathing vessels and kitchen boards differ greatly in scale, but each draws on the same practical description: straight grain, easy working, resistance to warping and rot, retained strength and a recognisable fragrance. Those qualities matter differently in a building, a vessel and a working surface.
Hinoki is not the inevitable wood for every tub. Japan’s national traditional-craft body lists both sushi tubs and bath tubs among objects made in Akita cedar, while the Forestry Agency includes sawara in the Kiso Goboku. Makers choose among timbers within particular objects, regions and craft traditions; the shape of an object does not prescribe a single species.
On a cutting board, hinoki’s softness has a particular purpose. A yielding face accepts the small cuts of use, letting the work surface take visible marks rather than asking the edge to bear the whole encounter. Is hinoki really antibacterial?
Hinokitiol is a real compound with a genuine history of biological research. Its name nevertheless encourages an easy botanical shortcut. The hinokitiol entry reports that the compound was isolated in 1936 from the heartwood of Taiwanese hinoki, a different tree from Japanese hinoki.
The hinokitiol entry gives a concentration of about 0.1–0.2% in Taiwanese hinoki, compared with about 0.02% in Japanese hinoki. That is roughly an order-of-magnitude difference, obscured when the shared word “hinoki” is treated as evidence of one chemical profile.
The same entry describes research conducted mainly in vitro—in laboratory systems outside a living organism—and in animal models. Such studies can demonstrate real biological activity without establishing that a finished Japanese hinoki board sanitises itself during ordinary kitchen use. Calling it simply “an antibacterial board” therefore reaches beyond what the tree, concentration and study setting establish.

The scent of a working surface
The Japanese encyclopaedia lists a distinctive fragrance among hinoki’s characteristics. Users often describe the scent as strongest when the wood is wet or warm. That is an observation about encountering the material in a bath or kitchen, not a chemical measurement or evidence of cleanliness.
Hinoki’s place becomes clearer once those claims are separated. At Ise Jingu, it belongs to exact renewal and forestry planned far ahead. In Kiso, it belongs to a history of scarcity and protection. In baths, tubs and boards, it becomes close enough to touch and smell.
The connection does not make a kitchen object ceremonial. It shows how material knowledge can persist at very different scales. Within Japanese kitchen craft, the hinoki board is the everyday, yielding end of that history: a soft surface chosen so the wood, rather than the edge, records the work.
