You can, but ceramic is the version worth considering, and it is still a compromise. A grooved steel rod is built for softer Western edges that roll. A hard Japanese edge barely rolls, so there is little to realign; pressure at a guessed angle can micro-chip it or grind a small, steep bevel. Ceramic is gentler but abrasive: it sharpens at the held angle and steepens the edge over time. The kitchen alternative is a few light strokes on a finishing stone, where the angle is visible. Keep the grooved steel for the Western knives it was made for.

What Honing Actually Does
The familiar explanation is easy to picture. A knife edge rolls sideways during use, and the rod pushes it upright again without removing metal. That folk model describes part of what can happen to a soft, deformed edge, but it is not a complete account of steeling.
One published electron-microscope series on steeling examined the same blade edge at successive stages before and after contact with a honing steel. Its images showed metal being removed by adhesive wear and a small micro-bevel forming at the apex. It did not establish that every rod, steel or technique behaves identically, but it did show that steeling cannot be reduced to straightening alone.
The common search-result distinction—honing realigns while sharpening removes metal—is therefore smaller than it is often made to sound. In that series, the rod was a slow sharpener, not merely a straightener.
Ceramic makes this especially visible. The grey swarf left on a ceramic rod is metal taken from the blade. That removal may be slight, but it is still abrasion. The rod is sharpening the edge at whatever angle the hand happens to hold.
Rolling, Chipping and Edge Stability
A softer, tougher edge tends to deform when it is pushed beyond what its fine geometry can support. The apex may lean or roll rather than immediately breaking away. That is the condition for which the traditional honing steel is useful: there is displaced metal that can be pushed, burnished or worn into a newly usable shape.
A harder edge resists that deformation. Once its limit is exceeded, however, it tends toward fracture rather than a broad roll. The result can be small chips at the apex instead of a bent edge waiting to be stood upright. These are tendencies, not rules for every knife or every cut.
One metallurgist’s published explanation of edge stability treats deformation and fracture as competing ways a thin edge can fail. The terminology, hardness and toughness relationship, and HRC context belong in Japanese knife steel basics, rather than being repeated here.
A hard Japanese edge generally deforms less, so there is less to hone in the traditional sense. If no rolled section is present, a grooved steel cannot find much to “realign.” Pressure and an uncertain angle can instead abrade a steep micro-bevel or place enough sideways stress on the fine edge to cause micro-chipping.
When a Ceramic Rod Is Reasonable
A ceramic rod can be a practical choice when speed matters and the user can reproduce the sharpening angle consistently. It is gentler than an aggressively grooved steel, but it is not a non-abrasive safety version of one. It works precisely because the ceramic removes metal.
Use light pressure, make edge-trailing passes with the spine leading, and hold the blade at the bevel angle used during sharpening. There is no benefit in bearing down. More force concentrates more load at the narrow contact point and makes an angle error less forgiving.
Each touch-up creates or enlarges a micro-bevel. As that micro-bevel widens over repeated sessions, the same quick passes remove too little material to restore the apex efficiently. This is the point at which the rod seems to have stopped working. A stone session can then reset the bevel rather than continuing to build a steeper edge on top of it.
That geometry drift is the cost of ceramic-rod convenience. The rod is fast and easy to reach, but its angle is hard to see; repeated approximation can turn the original fine bevel into a broader, steeper one.
Rod or Finishing-Stone Touch-Up?
A few light strokes on a finishing stone at the sharpening angle perform the job for which a ceramic rod is usually bought: removing a small amount of metal and restoring the apex before full sharpening is necessary. The flat stone makes it easier to place the existing bevel against a surface and see what is happening.
Angle selection and the marker method are covered in the sharpening angle guide. The useful point here is simply that the stone provides a visible reference surface; the rod asks the hand to hold an angle in open space.
A rod’s speed genuinely wins on a busy service line, where a brief edge refresh may need to happen mid-shift. In a home kitchen with a finishing stone within reach, that time advantage is much smaller. The stone offers more deliberate control and makes it easier to preserve the established bevel instead of accumulating a micro-bevel through frequent rod use.
The choice is practical rather than moral. Keep the grooved steel for softer Western knives, choose ceramic when immediate convenience outweighs the invisible-angle cost, and choose the finishing stone when preserving the established bevel matters more.
How Often Does a Japanese Edge Need Attention?
A published overview of honing steels notes that intra-day steeling is little practised in Japan, where harder knives are common. That fits the underlying edge behaviour: an edge that resists rolling does not need ritual realignment before every cutting session.
Hard edges still become dull, wear and occasionally chip. The difference is that maintenance should follow the knife’s behaviour rather than a calendar. Touch up when the edge stops entering food cleanly, begins to skate where it previously bit, or needs noticeably more force. If it is still cutting as expected, routine passes on a rod merely remove more metal and enlarge the micro-bevel.
Grooved, Smooth, Diamond and Ceramic Rods
As commonly described, a grooved steel has raised ridges that act much like a coarse file. It is the most aggressive of the steel rods and the least suitable default for a fine, hard Japanese edge.
A smooth steel removes the least material and comes closest to the traditional realignment model. Even so, a hard edge that has not rolled gives it little to realign.
A diamond rod is a sharpener in rod form. It cuts quickly and is the easiest type to overdo, especially with pressure or an uncertain angle. Ceramic occupies the middle ground: clearly abrasive, generally less aggressive than diamond, and still capable of changing the bevel through repeated use. None of these rod shapes makes the contact angle visible.
